There are so many different ways to cook with legumes! From a hot soup to an iced salad, from a hearty side dish to the main course, there are just as many ways to enjoy them as there are varieties. Legumes are a great source of protein, which is especially good for vegans, vegetarians, or those that just want to cut back on meat, and fish. They’re a high-carb food too but have no saturated fat.

Nutritional Benefits of Legumes

Legumes are highly nutritious and contain a wide range of vitamins, minerals, proteins, carbohydrates, fiber, antioxidants, phytochemicals, and other bioactive compounds that promote good health. Legumes are high-fiber sources of carbohydrates, which gives legumes a lower glycemic index than other carb sources which helps regulate blood sugar. 

A typical half-cup serving of legumes contains approximately 115 calories, 1g fat, 20g carbs, 8 g protein, and around8-9g of fiber.
